You can remove the data on your Gamecube Memory card on your Nintendo Wii. This will allow you to select individual save files and to delete them if you require.
1) Insert gamecube memory card into slot on the console.
2) Go into the 'Data Management Screen'.
3) Then select 'Save Data' followed by > 'Nintendo Gamecube'.
4) Select the slot A or B.
5) Find the game save you want to delete by selecting it.
